Feed The Resistance: Back to School!

It’s back to school time across Wisconsin!  Both Madison public schools and the UW started classes this week, so I thought it might be fun to eat like we did in college!  And is there a food that represents “college life” better than Mac & Cheese?  Maybe Pizza…but it’s close.  In celebration of the new school year, I made up a batch of Mac & Cheese…with a bit of a twist!  It’s Cajun Mac & Cheese!  Basically it’s Mac & Cheese made from scratch (not from a box), with some Pepper Jack cheese added to the usual Cheddar.  There’s also andouille sausage, green & red peppers, and onions to add to the spiciness of the dish.

To pair with the Cajun Mac & Cheese, Dee chose a West Cost IPA from Hop Valley Brewing Company called WesCo.  We often pair IPAs with spicy food, but this one worked in a bit of a different way – instead of cutting the spiciness, this beer actually brought more of that flavor out – which I LOVED…as I love Cajun food!
