Feed The Resistance: Cider Fest!
Tomorrow at Breese Stevens Field, it’s “Seltzer & Cider Fest ’25.” With that in mind, I thought it would be fun to try cooking with Cider, and found a recipe for a cider brine that was recommended to use with Salmon…and that’s what I did. To serve with the Cider-Brined Salmon, I also made a Celery, Apple, and Fennel Slaw. The apple in the slaw worked perfectly with the apple cider in the salmon brine.
The other thing that worked perfectly with the dish was the drinks that we had with it. I brought in a can of the Ciderboys Hard Apple Cider that was used in the brine, and Dee served up a New Glarus IPA, because, as the label says – it was “built to partner with food and friends.”
