Feed The Resistance: Coldplay/Cold Soup!

Coldplay does a SOLD OUT show at Camp Randall Stadium tomorrow night!  I have mentioned many times in the past, how much I love cold soup (a lot!).  So, in honor of COLDplay, today we’re serving up some good COLD soup.  In particular a Spanish soup called Salmorejo, which Cook’s Illustrated as described as “Gazpacho’s Sophisticated Sibling.”  It’s a very simple soup to make – just tomatoes, day-old white bread, and a little sherry vinegar, salt, garlic and olive oil.  All that is blended together, chilled for a couple of hours and then served, topped with chopped up hard-boiled egg and Serrano ham.

To pair with the soup, Dee picked an English style pub ale from Karben4 called “Champagne Tortoise.”  She chose this particular style of beer because, as she said, it basically “goes with everything!”  And she’s not wrong.
