Feed The Resistance: Cranberry BBQ Chicken Sliders!
Last week was “Cranberry Farmer Appreciation Week” in Wisconsin…and since the Cranberry is the State Fruit of Wisconsin, I had to make something with Cranberries. Somehow, I got in my head that a cranberry BBQ sauce would be good – so I started searching the internets and found this one…Cranberry Bourbon BBQ Sauce! I love Bourbon BBQ sauces, so I thought I’d give this one a try, and it did not disappoint! The sauce itself is pretty simple – just cranberries, brown sugar, and a little water boiled up with a few more ingredients that you probably already have in your pantry. Everything gets boiled up until the berries are bursting, and the sauce thickens…and that’s it! I actually used an immersion blender to blend it all up a little more, but that was not called for in the original recipe.
After making the basic sauce, I cooked up my chicken, and then shredded it, mixed it into the sauce and served it up on slider buns! YUMMY!
To pair with the sliders – Dee always recommends either contrasting or mirroring the flavors – and in this case she mirrored the flavors of the cranberries, with a Holiday Ale from New Belgium. It’s described as the flavors of Cranberry & Spice and Everything Nice!
