Feed The Resistance: Fall Flavors!

The Fall Equinox was last weekend, so Autumn is officially here…along with everything that goes with it…cooler weather…football…leaves changing colors…and good hearty fall food!  With that in mind, this week, I wanted to make a good hearty soup!  I’ve been on a bit of a vegetarian kick lately, so I pulled out an old vegetarian cookbook called “Sundays At Moosewood.”  Moosewood is a vegetarian restaurant in upstate New York.  On Sundays they serve lots of different ethnic meals.  So, they put together this book featuring some of the more popular meals from their Sunday suppers.  From that collection, I made West African Peanut Soup!  To pair with the soup, Dee picked a beer that she admitted was a bit of an oddball choice – Citrus Mistress from Hop Valley Brewing Company.  Like I said, she called it an oddball pairing, but it worked PERFECTLY!  It brought out the spices in the soup, and the soup brought out a great finish on the beer that wasn’t there when we drank the beer alone!

Happy Coincidence – after planning to make this vegetarian soup, I learned that the Madison Vegan Fest is happening tomorrow at Lunney Lake Farm Park, so if you want to check out even more good vegetarian food – head out there from 11am to 5pm.
