Feed The Resistance: Hoppin’ John for the New Year!

Once again this week, we dig into the Feed the Resistance archives – this time for a dish that is traditionally served in the south, to bring good luck in the New Year…”Hoppin’ John!”

Hoppin’ John is basically Black-Eyed Peas – with a few more things thrown in for good measure.  In this case, I took a vegetarian version of Hoppin’ John, from the “Sundays at Moosewood” cookbook.  I switched it up a bit and made it really MEATY with some bacon, and ham-hocks, and andouille sausage.  To serve with it, I made collard greens – also messing with another recipe.  The original recipe came from Marcus Samuelsson, and it was for Mac & Cheese with Collard Greens.  I just made the collard greens part of that recipe to serve with the Hoppin’ John.
