Feed The Resistance: Jolly Bob!
Many years ago, there was a great little restaurant on Willy St. called “Jolly Bob’s Jerk Joint.” Recently, on the Madison Foodie page on Facebook, there was a discussion about Jolly Bob’s, and a few recipes from the restaurant were posted, including my favorite…”Avo Cat.” Avo Cat was a catfish dish, with an avocado sauce. The catfish is breaded in a combination of crushed walnuts and panko bread crumbs. Overall, the dish came out tasting pretty much as I remember it from Jolly Bob’s – although the first time I made the sauce, it was a bit too thick, and this time I over-corrected, and it was a bit thinner than I remember. That said, it tasted great both times!
Because we were serving fish, and there was a little spice in the sauce, Dee’s choice for a pairing was Hinterland IPA – and as is almost always the case, the IPA worked great with both the fish and the spiciness of the sauce.
