Feed The Resistance: June Dairy Month!

It’s June Dairy Month is Wisconsin!  To celebrate, we’re cooking with CHEESE this week.  In particular, I went back to a recipe that I used to make all the time when I was a vegetarian – from the “Sundays At Moosewood Restaurant” cookbook, “Pimento Cheese Soup.”  If you have followed along at all, you know that I am obsessed with Pimento Cheese – a cheese spread that is very popular in the south.  Most all southern households have their own secret recipe for Pimento Cheese, and when I lived in the south, I came up with my own recipe.  This soup starts with a base of sweet potatoes, white potatoes and onions, and cheese, and then adds to that many of the same flavors that make up a good pimento cheese spread.

Dee had lots of thoughts on what might work with this particular soup, and in the end, went with Crooked Judge IPA from Hubbleton Brewing Company, which worked perfectly with the cheese and the spiciness of the soup!
