Feed The Resistance: National Mustard Day!

Middleton, Wisconsin is the center of the world tomorrow…as we celebrate National Mustard Day at the Mustard Museum in downtown Middleton!  To help get ready for the big party, I did a little cooking with Mustard today, and made Brothy Coconut-Mustard Fish.  The broth is pretty simple – a couple cans of coconut milk, with a little honey, mustard, turmeric, and a sliced serrano chile.  After cooking that down a bit, you add in some green beans, cherry tomatoes and lime juice.  While the broth is cooking, roast the fish in the oven.  When the fish is done, add it to the broth and you’re ready to go!

To pair with the fish, Dee’s first thought was to pair it with a Coconut Porter – obviously, the coconut in the coconut porter would pair nicely with the coconut in the broth, but because porters don’t generally pair well with fish, she went with a lager – in particular the “Milwaukee Throwback Lager” from Central Waters Brewing.  The thinking behind the lager was to offset the heaviness of the sauce in the fish dish.  That pairing worked really well, but it also left us both wondering how the Coconut Porter would have worked???
