Feed The Resistance: Peaches!

Last week we celebrated the coming of SUMMER, and this week we’re keeping that summer vibe going and cooking with Peaches!  I gotta give a lot of credit to our fine sponsor – Brennan’s Market. Brennen’s is well known for their “Chin-Drippin’ Peaches” and that’s what inspired me to do some cooking with peaches.  What I made for today is Jalapeno Peach Chicken!  The dish has both fresh peaches and peach preserves.  The preserves are used in a glaze that covers the chicken, and the fresh peaches, along with jalapeno peppers and a few more spices tops the whole thing.

To pair with the chicken, Dee brought in Nuggetopia IPA from HOP Garden in Paoli.  This was an interesting pairing, because we both liked the chicken on it’s own and the beer on it’s own…and by all the pairing rules, the two should have gone together nicely (IPA’s pair well with spicy food).  Unfortunately, together, they just didn’t work – rather than the two flavors working together, they kind of cancelled each other out, leaving both a little flat.  But again, either one, on it’s own was really tasty.
