Feed The Resistance: Polish Spaghetti!

For many, many years, I have been hearing about the “Polish Spaghetti” that my wife’s Grandma used to make.  Unfortunately, Laura has never been able to find Grandma’s recipe…until recently!  Well, she didn’t actually find “Grandma’s” recipe – but she did find a recipe that she was pretty sure was exactly how Grandma made it!  So we gave it a try, and it was great!  Just as she had always described it, and nothing like the traditional Italian Spaghetti.  In fact – not “spaghetti” at all, but egg-noodles.  The recipe is super-simple…just add a can of tomato soup to the egg-noodles, along with a package of bacon, and some chopped onions.  That’s it!  Total comfort food!

To pair with the “Polish Spaghetti” – Dee brought in a good “comfort” beer – from Great Lakes Brewing Company, an Amber Lager called “Eliot Ness.”  I call it a “comfort beer” because it worked perfectly with the comfort food.
