Feed The Resistance: Road-Trip!
We’ve got a 3-day weekend ahead of us, and for a lot of people that means…ROAD-TRIP! So, how about some “Road-Trip Snacks?”
In my mind, a “Road-Trip Snack” must be easy to eat while driving…give me a little boost of energy…and NOT be messy. The snack mix that I made today kinda/sorta fits the bill – it can be a little messy, but beyond that, the “Chivda” snack mix works well. I learned of this snack mix through Food and Wine magazine, who says it’s a snack mix that’s popular during Diwali. This particular version is full of crispy rice flakes, nuts, shredded coconut, spices, seeds, raisins and more!
While the whole idea of today’s dish is a “Road-Trip Snack” – Dee still paired it with a beer. We’ll just encourage you to wait until you reach your destination before indulging in the beer. The beer that she shared with us this time comes from Half Acre – it’s their “Way Bird” Hazy IPA.
Oh, and let’s not forget my Road-Trip Hack: I always stay in a hotel that offers a free breakfast in the morning, and before I leave, I grab an empty coffee cup from the breakfast bar…and fill it with my snack mix. It’s great for the next leg of the road-trip. It fits perfectly into the cup holder in the car, so there’s always snacks at hand…
