Feed The Resistance: January 8th, 2021

Spicy pimento cheese is paired with King Sue IPA from Toppling Goliath Brewing Company:

Spicy Pimento Cheese

1/2 lb sharp cheddar
3 oz cream cheese
1/4 cup roasted red pepper
1/4 cup pimentos
1 tbsp dry sherry
1/4 tsp chipotle
3 tbsp pickle juice
3 tbsp Duke’s mayo
3 tbsp chives – chopped
1/4 cup shallots – diced
3 cloves of garlic – diced
1/2 tsp cayenne
pinch of salt

Mix everything together and let cool in the fridge for at least 30 minutes.
