Feed The Resistance: Summer!

Tomorrow is the Summer Solstice, which means Summer will officially be here!  To celebrate the start of Summer – I wanted to make a good Summer dish.  What could say “Summer” more than Salmon and Citrus?  So, I made a Salmon and Citrus Salad with Poppy Seed Dressing.  The recipe is totally simple – the dressing is just a little Buttermilk, Olive Oil and Poppy Seeds, whisked together.  The rest of the salad is just laying out pieces of Salmon, Oranges, and Grapefruit on a platter and drizzling a little of that dressing over the top.

To pair with the salad, Dee wanted to use and IPA, because IPAs usually work well with fish, and she chose “Fantasy Factory” from Karben 4, because, in addition to it being a good IPA, Fantasy Factory also has some citrus notes to go with the citrus in the dish.
