Feed The Resistance: Scary Halloween Ice Cream!

Halloween is just around the corner…so we’re serving up a really good No Churn Pumpkin Ice Cream!  I really wanted to take another crack at Ice Cream after my FAIL last week – and this one is perfect for the season.  It’s super-simple, with just five ingredients…Heavy Cream…Sweetened Condensed Milk…Pumpkin Puree…Salt…and Brandy!

Yes!  I said Brandy!

Basically, you whip up the Heavy Cream until soft peaks form, then you mix the rest of the ingredients together, and then fold the whipped cream into the other ingredients and put it in the freezer for several hours.

That’s it.  Done!

To pair with the Ice Cream – Dee brought in Fat Squirrel from New Glarus Brewing Company, thinking that the Hazelnut notes of the beer would work well with the Pumpkin flavor of the ice cream.  And, as usual, Dee was right!
